Tricon Foodservice Consultants were appointed by Intercontinental Hotel, Festival City in Dubai through Al Futtaim Group Real Estate (AFGRE). The property and ownership team developed a new waterside Fish House concept to benefit from the extended Festival City shopping centre footfall. Tricon received the outlet brief built on simple premise of promising the freshest range of fish, prepared however you like it. Our team created a show kitchen experience with signature centre-piece wood grill, allowing the culinary team to create ‘theatre’ at the heart of the venue. The project challenge came about when considering the previously established building services capability. The team had to develop new and upgraded solutions for the new operation fitting these within the ‘skin’ of the building. The design programme was extremely short, yet the specification and requirements of the open kitchen were delivered and coordinated on schedule.
