Clare College – Cambridge, UK

Following a recent change to the on-site catering management structure, Tricon was appointed, via the College Bursar, to conduct a diagnostic review of the catering operation. This comprised determining the optimum future management structure, identifying any deficiencies in the current operational systems and processes and proposing solutions to remedying any such deficiencies. The paper was formally presented to the College’s Directorate with clear recommendations and how each management role should be accountable for different elements of the overall service.
