Having previously worked with West Ham United Football Club to help design some of their catering offers at the club’s Upton Park ground, Tricon were appointed to work with them again, this time to develop the Food and Beverage Operational Design Brief for the new Legacy Stadium. The work was done in preparation for the club’s move to the ex-Olympic Park stadium which had been the centrepiece of the London Olympic Games in 2012.
Having met with the project team and West Ham senior management team to understand the clubs aspirations and objectives for the stadium, we undertook a detailed review of the existing business plan and operating specification, putting forward a number of recommendations and enhancements. Following on from the brief development work, we developed a framework catering specification to enable the entire catering service to be offered for competitive tender prior to the clubs planned occupation of the refreshed stadium and with the ability to accommodate up to 54,000 fans.
