UBS

5 Broadgate in the City of London is the London Head Office of financial services firm UBS. The project saw the consolidation of several London offices into purpose built new premises, comprising circa 700,000 square feet and housing 5,500 employees. The UBS building was the catalyst for the regeneration of the wider Broadgate development.

The extensive catering and hospitality provision includes several ground floor retail outlets, a large central restaurant, a 600+ seat conference and meeting room suite plus a separate 130 cover dining suite featuring a market leading chef’s table dining experience.

Phase 1 – base build appraisal to inform the initial property strategy. This utilised high-level data analysis and peer group benchmarks to determine the likely spatial requirements for back of house and front of house facilities.

Phase 2 – comprehensive foodservice strategy to inform the fit out of 5 Broadgate. The exercise involved consultations with stakeholders, analysis of existing internal operations and high street competition and consideration of what peer organisations are doing.

The initial base build appraisal was critical to informing the architectural space planning across the building. It was essential to ensure that adequate space and mechanical/electrical services were provided at an early stage.

The development of the detailed strategy applied an assessment of strategic considerations against technical requirements to develop a range of concept and service delivery options for review by UBS. This assessment looked at the merits and impacts of single versus multiple operator models, a centralised versus decentralised staff catering solution and the benefits and limitations of relying on an off-site production rather than the traditional on-site kitchen model.

The outcome was a clear and considered foodservice brief that was approved by the UBS steering group prior to commencement of detailed design work.
