OXFORD BROOKES UNIVERSITY

The John Henry Brookes Building on the Headington campus was the most significant project in the history of Oxford Brookes University. The building has many accolades, including winning RIBA national awards.

The structure includes a variety of catering-led spaces intended to meet the evolving expectations for catering within the education sector. The vibrant Café Central in the Forum, planned as an open space, has been designed to foster collaboration amongst students and staff whilst equally supporting individual study. The building also includes the stunning terrace Restaurant and Deli, along with the table service Taylors Yard Café.

Preparation of a detailed foodservice strategy as a core member of the project team. The scope of work involved data gathering and analysis, stakeholder consultations and development of conceptual options.

After providing a full catering design consultancy service, including a comprehensive operational and design brief, we were engaged to prepare a detailed catering strategy for their other three campuses, to ensure a consistent provision was delivered across the estate.

The strategy was derived from extensive consultations with key stakeholders, including Students’ Union representatives as well as University senior management, coupled with financial modelling that took historic trading data and extrapolated it forward to produce detailed demand assessments.

The critical challenge was to combine the agreed strategic visitations with the physical parameters of the planned building infrastructure. The output from the consultations, along with the financial modelling and application of relevant market trends, enabled the development of a range of catering facilities to meet the aspirations for students and the wider University community.
